As with most brilliant ideas there is a chorus standing to take credit for the invention of ricotta. In the current debate Sicily leads the pack as the most promising candidate. But farmers all around the Mediterranean have been doing creative things for ages with whey, the raw material of ricotta.
Ricotta is not a cheese but a byproduct of making cheese. The leftover whey is heated and the resulting solids become ricotta. Its name literally means “re-cooked.”
Ricotta is soft and an excellent canvas for creating flavor by mixing with vegetables, herbs, or dried fruit. The results are ethereal ravioli, lasagne, and gnocchi, or for those who prefer sweet, cannoli and cassata.
Every April the the town of Vizzini celebrates Sagra della Ricotta e del Formaggio. The festival highlights the craft of making ricotta and includes artisanal woodworking and theatrical performances. Antipasto di Ricotta

Serves 4
1 pound/450 g fresh sheep's milk ricotta
Freshly ground black pepper to taste
Freshly grated zest of 1 lemon
Extra-virgin olive oil
Whisk the ricotta in a mixing bowl until it’s creamy.
Add the pepper and lemon zest and stir them in.
Spoon onto plates and add more lemon zest.
Drizzle with extra-virgin olive oil.
