Sicily has a variety of fruit based gels that truly honor their source. Among them are bright lemon, harvest grape, and at this time of year, watermelon! The watermelon version is typical of Palermo and is especially popular for the upcoming ferragosto holiday.
Watermelon’s origins trace to the Nile river valley. The Arabs brought Citrullus lanatus to Sicily during the middle ages. Its affinity for warm and tropical climates led it to thrive in its new home. Meanwhile, watermelon merged into the native cuisine and has become a favorite summer food.
Watermelon performs spectacularly as a flavoring of granita and gelato, but Gelo di melone is a work of art for the eyes and palate. During the hot Sicilian summer such delicacies double as survival gear. This cloudburst of flavor has only four ingredients: watermelon, gelatin, dark chocolate, and pistachios.
Gelo di melone
Serves 4
4 cups watermelon, puréed
2 packets unflavored gelatin (2 tbsp gelatin powder)
Garnish:
dark chocolate
pistachios
1. Chop the watermelon into cubes, remove seeds if there are any. Purée the watermelon with a hand blender or juicer.
2. In a large bowl, add 1/2 of the watermelon purée and sprinkle the gelatin powder over it. This will soften the gelatin.
3. Meanwhile heat the rest of the purée over low heat just until boiling. Then pour over the softened gelatin powder. Stir until dissolved.
4. Refrigerate until set.
5. Before serving garnish with a dusting of grated dark chocolate or even a sprinkle of chocolate chips. Add a handful of pistachios and it is already to enjoy!
Note: Some recipes use cornstarch as a thickener.
